Chef Eric Cook Ventures into the French Quarter With Brand New Restaurant: Saint John

It’s not every day you encounter a chef whose food you dream of daily, yet Executive Chef & Owner Eric Cook at Gris-Gris isn’t your average chef. Gris-Gris is only on their 3rd year after opening in 2018 at 1800 Magazine Street, but the food, service, and atmosphere has left an impression that will last a lifetime. But now, Chef Cook won’t just be serving up his takes on “haute Creole cuisine” in the New Orleans Garden District, his talents are headed to the French Quarter!

Saint John will be opening their doors in mid-September as Cook’s newest restaurant concept. The restaurant is moving into 1117 Decatur Street, home to former restaurant Trinity. Exploring the evolution of true New Orleans food similar to Gris-Gris, Saint John will present these flavors in an “elevated, yet approachable way.” 

In a press release shared by the restaurant, Saint John features “an open kitchen table and bar, first floor dining and a second story dining room with balcony seating, also available for private events. The restaurant will serve lunch, dinner and weekend brunch (Wed – Sun).”

What will the restaurant serve?

“Haute Creole cuisine” is where it’s at at Saint John. Try a similar take to Gris-Gris’ award-winning Chicken & Andouille Gumbo, or new dishes including:

  • Oysters Saint John, aka Oysters Three Ways: Poached in Double Cream, Crispy Fried,  and Oyster Dressing in Vol-au-vent
  • Bacon Fat Seared Duck Poppers: Crispy Seared Duck Breast, Root Beer Braised Pork Belly, Jalapeño Creole Cream Cheese, with Satsuma Glaze and Fried Duck Skin
  • River Road Shrimp Etouffee: Local Shrimp Smothered in Melted Butter, Holy Trinity, Garlic and Tomatoes with Brown Roux and Steamed Louisiana Popcorn Rice
  • Smothered Turkey Necks: Slow Braised in Brown Gravy and Caramelized Onions with Homemade Potato Salad

Want to work at Saint John?

Saint John will host a Staffing Open House on Tuesday, August 31 from 10 am – 2 pm for all front-of-house and back-of-house positions. Those interested are asked to bring a resume and COVID vaccine card (masks must be worn while indoors).
