The holidays are a feast for the senses. Treat your loved to one to an early present with a memorable dining experience at Couvant: A Celebration of Black Truffle. Executive Chef Ryan Pearson invites YOU to explore the flavors of black truffle through a five-course meal curated through his tastebuds on Thursday, December 15 at 7pm. Accompanying each course are thoughtfully crafted biodynamic, organic and natural wine pairings to top off the evening.

Tickets are available for $200 which includes your food, drinks, tax, and gratuity, and reservations are open NOW on Resy.

  • BRAISED ARTICHOKES: Black Truffle Vinaigrette, Epoisse, Arugula PurĂ©e
  • RISOTTO: Mascarpone, Aged Parmesan, Shaved Black Truffle
  • OVEN BAKED SNAPPER: Cauliflower, Black Truffle PurĂ©e, Chiffonade Black Truffle
  • DRY-AGED N.Y. STRIP: Sauce PĂ©rigueux, Wilted Spinach, Potato Fondant
  • CHOCOLATE ENTREMET: Rich Chocolate Cake, Malted Ice Cream

Couvant is located inside the Eliza Jane Hotel. The French-inspired Brasserie features fare inspired by New Orleans’ French roots with a twist, a la Chef Pearson. After working abroad in Paris and New York, Chef Ryan Pearson returned to the New Orleans culinary scene. In France, Pearson was a Chef Consultant helping open the first high-end New Orleans Brasserie in Paris. He curated dynamic dishes inspired by New Orleans, but with original French products and ingredients.

What is black truffle?

Though you may have heard of this delicacy, you probably haven’t yet had the pleasure of tasting it! Black truffle is a species of fungus that is native to Southern Europe and grow beneath loose soil, usually near the roots of trees. So what does it taste like? Truffles have a deep aroma and strong fragrance that are a prelude to their taste. Earthy and musky; their flavor is savory, an almost buttery/garlicky/mushroom fragrance that’s totally unique. Because of their versatility and uniqueness, truffles can amplify the flavors of dishes they’re paired with – which is exactly what Chef Ryan Pearson has in store.
